Easter Traditions

Do you have an Easter tradition at your house?

Maybe it's decorating eggs?
A special meal with family and friends?

We have 2 traditions in our home.
One is a delicious brunch that consists of this super simple
breakfast casserole recipe featuring
Jimmy Dean sausage.
The kids gobble it up with gusto every year.
I think my favorite part is that I can assemble it the night before.

I just pull it out of the refrigerator and pop it in the oven in the morning.
It means Mom can relax and enjoy Easter morning too...
with almost no cleanup!

Then for the second tradition.
I'm not quite sure how this started, but as the kids got a little older,
filling baskets required a little more creativity
than dollar store trinkets and candy.
Somehow we settled on a silly shirt!
That's right, a silly shirt in their Easter basket,
along with some candy.

This was my son's from last year...
we all laughed so hard when he first wore it,
and yes, he still wears it.

This year I've managed to find some equally funny ones...
but of course since my kids read my blog,
they will have to wait to make an appearance.

Wishing you all a wonderful Easter holiday,
filled with family and friends and I hope
some fantastic food!

I'll be back early next week
with my very first blog giveaway!!
I'm really excited...hope you'll pop back to check it out!

Happy Easter!

Spring Break Foodie

Spring Break!

It was last week,
and it was great.
No alarm clock...
morning coffee in my pj's,
little things that make you smile.

So I asked my boys,
pick something you want to do...
something fun.

They mulled it over and got back to me.
Can we go find a food truck for lunch?
Did I hear that right?

Food  = Fun!!
Big smile.

So we did a little searching and found one that
was going to be within reasonable traveling distance.

And it just happened to be the
nom nom TRUCK!

They serve delicious
Vietnamese Bahn Mi.

Their truck is a fun bright green,
you can spot it from mile away.

We all decided on their combo,
a Bahn Mi sandwich and a lemongrass taco.

It smelled so good waiting for our order!

Lemongrass taco with pickled daikon and carrots,
fresh cilantro.
Yum!!

And then the Bahn Mi.
A simple combination of fantastic ingredients.
The sweet glazed pork, the pickled vegetables,
a little kick of heat and then that baguette.
Crunchy on the outside, a soft a chewy interior.
Each bite was a combination of well balanced exciting flavors.
We all loved them.

Then how lucky are we...
we spy an ice cream truck across the way.

And it wasn't just any ice cream truck.
It was
Cool Haus!
They have a fantastic concept.
Pick your fresh baked homemade cookie flavor.
Choose your ice cream flavor.
Then they make you a MONSTER size
ice cream sandwich!

Chocolate chip cookies with red velvet cake ice cream.

Chocolate chip cookies with Nutella toasted almond ice cream.

And then mine....

Sandwiched between two soft and chewy oatmeal cookies.

You know that scene from
Charlie and The Chocolate Factory
where they roll
Violet out of the candy making room...
looking all round and plump like a blueberry?

That's what we all felt like after our ginormous lunch!

sunshine
sweet ice cream
savory sandwiches filled with new flavors
giggling teenagers
stories and music on the drive
junior foodies in the making

one happy mom

Popped Apples

Yet another week has rolled by
and Tuesday has shown her face yet again...
And that means it's
Tickle Me Tuesday!

Want to know what it's all about...
find out here.

You know that moment when you're standing in line
 at the grocery store,
and all of a sudden your tummy grumbles...
Oooops...forgot to eat lunch...and it's almost 3:00.
I've got to eat something I think, looking around me.
Not many choices to be seen.
Candy bar?
No.
Soda?
No.

Then I spotted these...

Yogavive Apple Chips
Peach flavored none the less.
Sounded good...
healthier than any of the other options.

So I bought a bag...

These are fantastic!
You know your typical freeze dried fruit,
that has the strangest chewy texture and not a whole lot of taste.
These are NOT those...
these are "popped" crispy deliciousness!!

And the "peach" part...
they really do taste like a peach crossed with an apple.

You can visit YogaVive
to find out more about them and where you can
find them in your local area.

They come in 5 flavors:
Original, Apple Cinnamon, Caramel,
Peach & Strawberry.

I've since tried almost all the flavors and have
stocked up on them.
They are perfect for keeping in your desk at work,
in your purse or in the car.

A delicious and healthy snack!
So that's what has
"popped"
my fancy this week!

Olives and Sea Salt

If someone offered you olive oil and sea salt for dessert...
would you try it?

I first read about this dessert in
Italy cookbook.

I did a double take when I read the page,
but I'm always up for trying something new so
we gave it a go and...
This dessert ranks up there with the best!

Simple and honest.
Truly fine ingredients...
showing what they are made of.

You will need:

Vanilla ice cream
Olive oil
(A really good quality, grassy or fruity flavored one)
Sea Salt

That's it!

Sea Salt

Olive Oil

Drizzle olive oil over the ice cream and
sprinkle with sea salt.

How does it taste?

It defies explanation...

It's sweet and salty,
rich from the olive oil.
It coats your tongue and
lingers on the palette in a seductive kind of way.
It tastes like being outside...
like the fruits of the earth.

It is addicting!

It is one of those flavor combinations
that you have to try to appreciate.
So go taste it...

You'll understand when you do.

Fruit Salad

Where did the week go...
It's Tuesday again and that means,
Tickle Me Tuesday

Not sure what it's all about
find out here

This week I've been on an exotic vacation,
thanks to my 12 year old son!

It was my birthday last week and he
was let loose in
to do some birthday shopping for Mom.

I think he was either dreaming of eating fruit salad
or going on vacation while he was shopping.
First I got this Mango shower gel.
Makes me hungry when I take a shower.
Yum!

Then I got Passionfruit lotion.
This stuff is out of this world...
Love it!
Feels perfect for the increasing
 temperatures and sunshine.
And then just in case I felt the need to
sprinkle a little coconut
on top of my fruit salad...
He threw in this!
No need to hop an airplane for my next exotic locale...
I just need to hop in the shower!

That is what has been
Tickling My Fruity Senses
this week.

Want to see more?
Then head on over to
and check out some more great finds!!

Happy Tuesday!
